Russian Salad | 
    Rheinstein castle, Trecktinghausen Germany  | 
  
1 c. hard cooked egg, chopped  | 
    Toss egg, peas, carrots, cucumber and spring onion in a serving bowl. Add potatoes and toss well. Add salt and pepper. Mix in mayonnaise. Chill. Decorate with olives before serving. Best made a day ahead. |
